Who is Madhur Jaffrey?

She learned to cook by airmail.

She grew up in Civil Lines in Delhi through the last years of British rule, and was fourteen at independence and partition. She took a BA in English at Miranda House, University of Delhi, between 1950 and 1953, and then went to London to the Royal Academy of Dramatic Art from 1955 to 1957, where her contemporaries included Diana Rigg and Glenda Jackson.

She hated the food. Her own account of the RADA canteen is grey roast beef and overcooked cabbage with watery potatoes. So she wrote home, and her mother began sending recipes to London by airmail, in Hindi. The first thing she made was jeera aloo, cumin potatoes. That is where this line turns: a homesick drama student learning her own country's cooking from letters, several thousand miles from the kitchen it belonged to.

She had a serious acting career alongside it. She won the Silver Bear for Best Actress at the Berlin Film Festival in 1965 for Shakespeare Wallah, and appeared in several Merchant Ivory films. Her first cookbook, An Invitation to Indian Cooking, came in 1973, and was inducted into the James Beard Cookbook Hall of Fame in 2006. Her BBC series Madhur Jaffrey's Indian Cookery in 1982 changed what British households cooked, and it is not an exaggeration to say a national cuisine shifted around it. She has written more than a dozen cookbooks, won six James Beard Awards and a lifetime achievement award in 2023, was made CBE in 2004 and received the Padma Bhushan in 2022. Her line is worth reading because it starts with a bad canteen.
