Who is Dominique Crenn?
France had no kitchen for her, so she went and built one.
She was born in 1965 and adopted at eighteen months by a couple in Versailles. Her father was a politician who took her to eat in starred restaurants, her mother cooked widely and well, and the summers were spent on the family farm in Brittany. That is where the food comes from. What she did not have was a route into a professional kitchen in France, where the trade was effectively closed to her, and she never attended culinary school at all.
So she left. She arrived in San Francisco in the late 1980s and started at Stars under Jeremiah Tower, learning on the job because there was no other way she was going to learn. She worked through a series of kitchens in California, then took a head chef's post at the InterContinental in Jakarta, which made her the first woman to run a hotel kitchen of that size in Indonesia. In 1998 civil unrest forced her out of the country, and she began again in Los Angeles.
She took over Luce in San Francisco in 2008 and it earned a Michelin star the following year, then a second. Atelier Crenn opened in 2011 and was awarded two stars, and in 2018 it became the first restaurant in the United States led by a woman to hold three. She had already been named the World's Best Female Chef in 2016 and took a James Beard award in 2018. Then, within months of the third star, she was diagnosed with an aggressive breast cancer. She kept working through sixteen rounds of chemotherapy and a double mastectomy, took meat off every one of her menus in October 2019, published a memoir in 2020, and was declared free of the disease at the end of that year. Her line is worth reading because the peak and the worst of it arrive in the same twelve months.
