Who is Clare Smyth?
A farm, a holiday job, and three stars of her own.
She grew up on her father William's farm outside Belfast. At fifteen she took a holiday job that decided the rest of it, and at sixteen she left school altogether to study catering at Highbury College in Portsmouth. That is the whole beginning: no culinary dynasty, no connections, a farm and a summer job.
She trained under Gordon Ramsay at his three Michelin starred restaurant, and spent eighteen months at Alain Ducasse's Le Louis XV in Monaco, which is about as hard as European kitchens get. In 2007 she was appointed head chef at Restaurant Gordon Ramsay, and became the first female chef in the United Kingdom to run a restaurant holding three Michelin stars. She was twenty eight.
She was appointed MBE in the 2013 Birthday Honours. In July 2017 she opened Core, her own restaurant, in Notting Hill. The World's 50 Best named her the World's Best Female Chef in 2018, and in 2021 Core was awarded three Michelin stars, which meant she held them under her own name rather than somebody else's. She has since collaborated with Dom Pérignon and opened Corenucopia in Chelsea. Her line is worth reading for the sixteen: she left school before most chefs have decided what to do, and was running a three star kitchen twelve years later.
