Who is Fatmata Binta?

A restaurant with no address, and the world came to it.

She was born in Freetown in 1984, to Fulani parents whose own families came from Fouta Djallon in Guinea. When the Sierra Leone civil war broke out she and her family fled to Guinea alongside a community of about two hundred people. Displacement is where the story starts, and it is also, eventually, the shape of the work.

She studied international relations, worked as a television host, and taught English in Madrid. Then she went to Nairobi and trained at Boma International Hospitality College, which is a long way round to a kitchen and gave her something most chefs do not have: three continents of context before she started cooking professionally.

Dine on a Mat, founded in 2016, is a pop up with no fixed address. Guests eat seated on a mat, in the Fulani way, and the food is Fulani and nomadic, built on ancestral technique and on fonio, an old West African grain. It has travelled across Africa, North America, the Caribbean and Europe. In 2020 she set up the Fulani Kitchen Foundation, which by 2022 had assisted over three hundred families across twelve communities in four regions of Ghana. That year she won the Basque Culinary World Prize, the first African to do so, and in 2025 the Food and Agriculture Organization made her a Regional Goodwill Ambassador for Africa. Her line is worth reading because she turned the thing that happened to her into the form of the work.
