Who is Enrique Olvera?

He was cooking the wrong food, and he changed it.

He was born in Mexico City in 1976 and went to the Culinary Institute of America in New York, taking an associate degree in 1997 and a bachelor's in 1999. He came home and opened Pujol on 6 May 2000. He was twenty four, which is young enough that almost nobody would have given him the money.

The first version of Pujol cooked Asian and American food, because that is what a serious restaurant in Mexico City was assumed to do. It ran into financial difficulty, and in 2006 he changed the whole restaurant to traditional Mexican cooking instead. That decision is the hinge of the line, and it was made from a weak position rather than a strong one.

The signature dish is mole madre, mole nuevo: a black mole of chilhuacle chilli with over a hundred ingredients, kept alive by adding fresh mole about every two days. By 23 July 2022 that sauce had been aged for two thousand eight hundred and fifty two days. Pujol has ranked in the World's 50 Best Restaurants since 2011, reaching fifth in 2022, and took two Michelin stars in 2024 when Mexico's first Michelin Guide appeared. It fell to sixtieth in 2025, which is on this line too. He also runs Cosme, Damian, Atla, Manta, Eno, Moxi and Teo, and appeared on Chef's Table. His line is worth reading for 2006.
